New to Cellaring

    Hey everyone, I am going to start a little mini aging corner in a deep closet under my stairs. Nice and dark, nice and cool, and plenty of head room is rad. Anyways, I have aged a small hand full of beers over the last 5 years, but want to add a decent amount to it so I can actually be impressed when I open that door. I have a pretty broad preference in taste and like to try things all over the spectrum. So now my questions.... if you could drop 5-10 beers in to your cellar, what would they be?

    PS - I am in So Cal so I have locked away some brews from the Bruery, Stone, and some local little craft brewers. Any further help would be really appreciated!

    Surprised nobody has jumped in with 2c on this one, bcbs, RR, had 3 year old Double bastard a month ago and loved it, parabola is amazing fresh or otherwise but I have some sitting in a box

    This my friends, is my list of beers I have, I want, I am getting, I would love to have, and I have heard I should get. It is starting to look like my notes for a Fantasy football draft or something haha....excuse my chicken scratch.
