New to Whitelabs...difference between 566 and 568?

    Hi folks, I'm new to White labs saison yeasts 566 and 568. Could anyone tell me the flavor characteristics of these yeasts? I'm wary of using the 568 for a low gravity saison I'm brewing because it sounds like it may have more classic "trappisty" flavors....True? Not true? Thanks!

    I recognize you are asking about 566 vs. 568 but permit me to discuss 585. I just recently bottled a Saison that I fermented using 585 (I have used this yeast before) and once again:

    · Great fermentation performance; primary fermentation complete in less than 2 weeks. Fermentation temperature in the low to mid 70’s.

    · An absolutely wonderful combination of esters (fruity flavors) and phenols (spicy type flavors).
