    Was a fan of this place when they opened in 2018: Glad they rose to the ranks to host 2021 Zwanze

    They were elected this year (Saturday, September 25th), and ya the space is extremely small; nonetheless, Seymour was quite small as well, when they hosted it a couple years ago, but offered sessions to split up the crowd

    can confirm this beer is awesome. All the marking of an excellent mild with a small boost of earth from the juniper boughs and needles.

    We’ve been selling their beers really well so far at beer noggin. Looking forward to what comes next!

    I'm glad you guys noticed that we are rolling out our first beer with Scandinavian techniques!

    Not sure what you're referring to with the branding. The name or the artwork?

    We're so happy with the flavors we got out of the branches. There's some room to improve on our technique but we learned a lot in terms of what processes get what flavors. The wood gives off a firm cedar flavor and aroma, while the needles give a lemon/menthol/"fresh" taste. Definitely going to be working with this ingredient more in the future.

    Beer Noggin was one of the first places to get their hands on some! Rolling out in the city this week as well. Cheers all :-)

    Naming convention quite similar to Wunderkammer. Regardless, keeping an eye on the mild

    ...looking to see how this process plays out on the mixed fermentations

    Ah, I gotcha yeah the name's are similar. Found Art and Found Object are even synonyms for the same phenomenon so I guess our heads were kind of in the same place with that. I don't think anyone will confuse one for the other which is good!

    Our projects seem to be quite different as well - we're exploring eastern euro and farmhouse techniques (in clean beers) while Wunderkammer seems to be doing more mixed ferm with a foraged component. Both quite interesting but fairly different if you ask me. I haven't had any Wunderkammer but sure hope to soon.

    The eastern euro farmhouse brewers we're studying were actually quite obsessed with keeping their beer from souring, funny enough. Cheers!
