Newbie cellar list

    So moved into a new place and it came with a root cellar that even in this humid heat we have been having does not get above 55, so at last I can save doubles of the beer I buy or as I have been trying to do is get into the wonderful of aging beer.

    Sadly I'm like a fat kid left alone in a room with cake, I keep drinking the beer I get to save when I have people over or we do group camping trips that we call three idiots beer fest. My selection is small again but these are the beers I am locking away from myself for at least a year, any of these seem like a bad choice? All of these are 2012 if not dated.

    Anything that is barrel aged is pretty much good to go out the door, so the Full Sail and CW Cherry might not get any better.

    Firestone Walker's beers usually best when they are released, as well. Drink the Sucaba.

    Stone IRS and Unibroue Terrible are just begging to be cellared.

    I had drank one of the sucaba's and it was hands down one of my top beers, one of those things where I want to drink it but once its gone I may have a bottle sized hole in my heart. Noticed last night CW stout has a vintage date of 2015 marked on the bottle but doubt I can keep it that long.

    Thanks for the tips guys, now I just need to stock more "drink this now" stuff down there so i don't get all handsy with the good stuff for a bit.

    I'm starting out now as well, I figure by buying lots of huge RIS, quadruples and the like and just burying it in my cellar I won't be tempted to crack it until at least winter, goal is next winter for lots of this though. also buying special occasion beer I'm not tempted to crack

    So I have

    BCBS
    Stone RIS
    Old Rasputin

    Rochefort 10
    St Bern. 12
    Cease and Desist
    The Perfect Crime Hollow Point

    Cantillon Kriek
    Cantillon Grand Cru
    Boulevard Saison-Brett

    Bruery Bois

    and whatever I buy to drink now is IPA's or cheaper stuff. basically allocating expensive beers to be cellared and cheaper stuff to be drank now

    I've come to the conclusion that the only beers I really want to cellar are lambics. But it took a while, and you may be different, so my recommendation would be to try something and if you think it might improve with time to stick it down there. After doing that for a while you'll learn what you like with age and what you don't.

    my main reason for keeping them is for our summer camping trips that I do with two other beer geeks. We each bring a couple of special bottles for the trips and with cellaring I can pick two of something up, we drink one then a year or two later have that same beer just to see how it changed or how our feelings changed about. I'm trying to avoid turning into my friend who got me into craft beers who has a cellar full of things I'm 100% sure he will never drink, they are something to look at and admire but that is it.

    As stupac hinted at above, lambics are the ones most people are likely to cellar because of the way the flavors vary as they age.

    However, I'm also a huge fan of aged quadruppels/BDSAs and cellaring Hair of the Dog Adam (if you ever get your hands on multiple bottles) for 5 years is a really, really good idea.

    Drink the La Petite Mort, does not get better with age IMO.

    I have always had good luck with 10% + RIS and Old Ales.
