Newbie Homebrew Questions

    These questions might be way past my skill level. But I figure if I'm going to do it, might as well go all in.

    1) 1 gallon batches. I prefer these for a lot of reasons. I'm going to try to do the WeldWerks Juicy Bit clone. Is it as simple as dividing everything by 5 or am I going to lose something along the way? Example; 2lb of Pale Ale Malt opposed to 10lb.

    2) Distilled vs. tap water? Got into home brew because of my dad. Starting to learn he has done 0 research lol I guess we have been using Distilled because it's 0 across the board and he heard something might be the reason he's getting headaches after drinking homebrew. I can't find my water information. If anybody is from NoVa and knows that would be cool.

    So from research Distilled water should be 0's across the board so I figured it would be easier to just build from that. I'm on Brewersfriend using this information for Juicy Bit for 1 gallon batch

    And it keeps giving me 0's for salt additions?

    3) They say cooling the wort quickly is key for clear beer. We obviously do not want clear beer for a NEIPA. I'm sure it doesn't hurt but just a random thought. Still do that for NEIPA?

    #1, water has nothing to do with your father's headaches.
    #2, definitely cool your wort as quickly as possible, it has far reaching implications.
    #3, scaling up or down can be difficult because it's not really linear, but you should be able to find an online brewing application that will help you adjust ~ mostly we're talking about bitterness (unless it's a spiced beer, which is a whole different ball game).

    Question number...

    1. No idea. 5 gallons is the smallest I've brewed. I don't see why it should not be as simple as equal division, with the exception that your boil-off rate is likely greater with a 1 gallon batch.

    2. I'm assuming you are doing extract batches and not all grain? Assuming that, it really doesn't matter if it is tap or RO. You don't mention if you are using city water. If so, you will need to treat with campden tablets even for extract batches. If you are all grain and don't know your water profile, RO and build up is best practice, but likely more complicated than you should be concerning yourself with now.

    3. Try to cool your wort quickly regardless of style. I would imagine this is very easy for a one gallon batch.

    I've done them all. Mostly extract/partial but I think all grain actually produced my best beer. Since there's no real extract kits for NEIPA. I was just going to do all grain.

    I've been using distilled. From what I have seen distilled is pretty much 0 for everything right? So I've put the information into Brewersfriend to reach the required ppm for the recipe and it's giving me 0's? Not sure if it's because it's 1 gallon and not even worth it or what? I mean if it's a matter of picking up some extra ingredients and adding 1/2 tsp here or there to get my ppm right. I would rather just go for it.
