No-boil all-grain beers

    So was discussing no-boil beers (eg no-boil Berliner) on the pico brew system thread not too long ago and am interested to hear people's experience who have experimented with brewing no-boil all-grain batches. DMS in particular.
    Would you ever consider a no-boil lambic?

    I've done several no boil Berliners and have loved the results. No noticeable DMS. I also like to throw some Brett in my Berliners About 3 months ago I made a no boil "lambic". Only time will tell how that will turn out but so far so good. Surprisingly it's already got a bit of tartness to it and very clear. I used 5 pounds pilsner, 5 pounds wheat malt a pound of flaked wheat for the raw aspect. I added some Brett B & L, an old vial off WLP 665 and some US-05. Just a general hodgepodge of leftover yeast and bugs. Also mash hopped with 1/2 oz of Hallertauer.
