Oak aged Bailey's Stout

    Hello, it's almost that time of the month to brew again and I'd like to try to brew a stout with Bailey's Irish cream aged on oak spirals. I'd like to get a solid profile together. Anyone have any ideas on how to put this bad guy together. Should I frame it as a milk stout with Bailey's or how would you picture putting it together? I don't have much experience putting together my own grain profile. I'm thinking of having some flaked oats and black patent malt, but what else do you think would work?

    I have not had Bailey's or any other cream liquor in a long time, but I would think the cream would not work well in a beer. I could see doing a milk stout and then adding something like Jameson's or what ever would approximate Bailey's.

    For a general stout, I like a mix of roasted barley, black patent and chocolate malt. A lot of people are not a fan of black patent. Some dark caramel malt (C120 or Special B) can work in a stout.

    I love Bailey's Irish cream but I don't know how well it would work in a beer. I agree that it'd be nice with a milk stout. You could always brew a small 1 gallon batch or so and experiment. Or purchase a commercial beer and add to taste. I'm aware that you won't be fermenting the sugars in the cream liquor but you might not want to necessarily want to do that. I think you'd be able to get a nice blend from just adding it. I actually have a chocolate oatmeal stout still in primary and i'll be sure to try adding some Bailey's to the glass.

    I bet it would taste great in a standard Irish stout.

    Looks like I'll have to do a good old fashioned experiment. I'm thinking of making a milk stout then either blending it with Bailey's or putting it on oak spirals that have been soaking in Bailey's. I'm also thinking of adding coffee to it... Either way I'd imagine it would be pretty funky and fun to try.
