oak soaking in spirits - will there be a 2dary fermentation when added?

    Let's say you have some French oak cubes soaking in bourbon for 6 months.
    you make (let's say) an imp stout. rack that to secondary on top of the oak cubes (no spirits). will there be any additional fermentation? are there fermentable sugars in the bourbon? oak?

    just wondering because i'm getting what looks like mini-krausens forming around the oak cubes. the rest of the surface looks clean. not really thinking it's brett.

    Is the oak floating or submerged? How long the oak been in?

    Surfaces for CO2 bubble formation? Perhaps just a physical effect.

    Brett lives deep inside oak.....Brett is able to metabolize alcohol......Brett lives on ........pellicle will ensue.

    Really have to wait it out, could be mold though, I'd watch for color and take pics to upload here. It's hard to tell from just that description.

    I would agree that the CO2 in solution is nucleating on the cube surfaces.

    I was having a senior moment and could not think of the term "nucleation point." As soon as I hit the send but, the jargon rushed back into my brain.

    when you say "solution", you mean the liquor?

    In solution is just referring to the CO2 that's dissolved in the beer. Simply put, the oak is providing a surface for dissolved CO2 in the beer to attach to, which you see as bubbles. Similar to what you would see with a beer in a glass with a laser etching in the bottom.

    NO, the co2 left in solution, would be the co2 left in the beer after fermentation.

    The wood has millions of nucleation points at which you would see some foaming of the co2 around each one of them at the surface.

    2 weeks after racking. still some "blobs" around 3 of the oak cubes. looks like foam or krausen.
    so i'll see what happens.
