odd beer to age

    I found this one deep in the back of the beer fridge. This bottle of Devils dancer is well over 3 years old. I did not expect much but did not want to waste it . This is really good aged. I cannot believe how mellow and complex the taste is . reminds me of a Chamay . I thought it would be a complete malt bomb but that was not the case. Has anyone else aged a beer that they is not recommended to be aged and was surprised how tasty it was? Please share ...

    Based on what I've heard, Devil Dancer is better aged - personal preference, of course. But if I happened to pick some up, I think I'd do the same.

    I have a bottle of 2012 Sierra Nevada Harvest in my fridge. I'll try it one day, for science.

    Big, real big, IPAs are supposed to age well. I've never tried aging a TIPA but a 120 min DFH is supposed to be the standard bearer for that type of stuff and it says "ages well" right on the label.

    90 minute is significantly better after 6mo-1year in the fridge.

    I don't like Devil Dancer much when fresh. A completely different (and better!) beer with 1+ years.

    Hmm I wasn't impressed with Devil Dancer either. Maybe I should age some?

    On topic, aged Hopslam isn't very good. Even just a few months . ..

    I don't know about "not supposed" to be aged, but as much as I like it fresh, I found a bottle in the back of my cellar a year plus old, and it had turned funky - sour, in a really good way. Since then, I've bought bottles and put them away. I have at least a case down there of various ages.

    This actually doesn't surprise me. I think lots of these triple IPAs age pretty well. But then i also think most of them aren't good fresh .

    Just for fun I have held onto two of Goose Islands Pepe Nero. One is at 4 years and the other is at 3 years. I want to try one at 5 years and the other at 4 years.... Unfortunately, they stopped making the beer so I don't have a fresh one to compare it too. Oh well, still I felt like it will be a fun experiment -- I will update when I eventually crack them open.

    A little while back, I tried a Pepe Nero with about 2 years on it. Way better than fresh. The peppery flavors that made the beer imbalanced had completely smoothed out. Think you're in for a treat when you finally crack those open.

    This 90 minute with some age on it is very enjoyable, still really like it fresh but it is worth aging.

    I actually quite enjoy aged Hopslam. The hops drop off and you're left with a sweet, nice honey brew.

    I'm the same way, not being a huge IPA fan. Bought a single sixer this year. Drank 3 fresh, still have 3.

    Oh I drank it, but I thought the other 4 bottles I'd drank earlier were better than the last two. Maybe I should have kept one for the cellar :grinning:

    I just had a 2011 Nero a few weeks back. It was a really fun beer to drink. Roasty, lightly peppered, with a nice tang. The carbonation really let everything shine.

    Ive tried. Past its prime. I think you may find the same unfortunately. Ive tried it with a few of the harvest releases.

    I would if I Were you. I had a year old one and a 6month one. They were both quite enjoyable. The booziness of it just didnt allow the rotted hops to ruin the flavor. Like a Frankenbraggot of sorts.
