I just started brewing and I've done a few batches and all end up with this Saison type funk but I'm dong IPAs (or trying to). They all tasted good going into the bottling bucket but they all ended up the same way. I use - Safele 05 or Vermont Ale Yeast, glass carboy (some went into a secondary), siphon to transfer and a plastic bottling bucket. Fermented all at 70 (that's the temp of the room) and then 65. Any ideas?
Oh, I also fill the bottling bucket first with PBW to give the bottles a soak and then do the same with Sani Clean for a final bottle rinse and then empty the bucket. I am assuming (maybe wrongly) this is a good way to clean the bucket too.

I don't see 'funky' in this list of descriptors, although I'm pretty sure that word is used in the book somewhere. But reading this chapter may give you a lead to a more precise description of what you are tasting so that you can read the reason for the off-flavor, or come back here with additional descriptive words that you are experiencing. Are you brewing extract method or all-grain?
Extract right now. And I did read many of the off flavor literature and this doesn't fit into for sure. It's super perplexing because it seems like I'm doing what I'm supposed to do. Just not sure how or when this flavor is getting introduced. From talking to a friend he says PBW doesn't play nice with plastic. Gotcha. I would say more of a musty type flavor. Nothing offensive.
Musty could be the result of wild (Brett) yeast. How do you sanitize your siphon and your bottling bucket?
I typically fill my bucket with PBW and then soak the siphon and bottles.... Dump it and then repeat with Sani Clean and clean the siphon and the bottles.
