So I brewed northern brewers LA Petite Orange beer and it tastes off.
I brewed it on the 2nd OG was 1.61 FG was 1.010. Used Omega ywast abbey ale c yeast and fermented at 70 degrees. Bottled last Thursday the 16th and opened the first bottle today and it tastes thin and watery with little actual flavor to it.

During the brew I ended up having to add about what gallons of water after the boil because apparently my boil off rate is significantly higher than I thought. Would that likely be the cause of the problem flavor problem?

Hard to say. But in general I would give it a little more time before passing any judgment on it, it's a little too soon to be cracking bottles.

Did you taste it before you bottled?

Adding back water could be the source of your problem if you mismeasured.

I got timed out while editing this...

Just wanted to add that if you are not making gravity checks pre-boil, post-boil, and pre-dilution, you should be. Get yourself a refractometer so you can do this quickly, with a few drops of liquid. Understanding gravity at different point in the brewday will allow you to make informed decisions, such as whether to add DME to raise the gravity or just how much water you need to add to reach a target gravity.

But also, if the beer is only one week old, it is probably not fully carbonated. Carbonation is certainly part of the overall flavor profile and also influences mouthfeel. Possibly this is why you perceive the beer to be watery and flavorless.

RO, tap, or bottled spring water?

I did post boil and post dilution but not pre-boil.

Sorry...more questions...was it filtered? Chlorides/chloramines can ferment into off flavors.

Filtered no but used campden tablets.

Although I realize now I didn't put any in my top off water.

But I wouldn't necessarily describe it as an off flavor more drastically muted to the point of near non-existence.
