I have a couple of bottles of Immort Ale and Bracia. I've heard and read that you shouldn't cellar these beers. However, the two I've mentioned are 9% abv and above. Anyone have any success aging these bad boys?

DFH Immort? If so, I think that one will age for a bit. Most stringer DFH beers are a little hot at the time of release. I haven't had Bracia but everything I've heard is that it's wonderfully balanced now. Doesn't sound like much will happen to improve that one.

Thanks, HighWine! I'll age one of the Bracia's for a year, and note the difference against its fresh counterpart.

I've had a variety of (Thornbridge) Bracia's fresh and aged over, 2,3 and 5 years. It definitely becomes more tight knitted and complex over time. But I won't give it anything beyond that.
