Did a search, got some info, but not enough to make a decision. So, time for a first post...

I'm new to cellaring, and I'm considering what to do with a bottle of Ommegang Ommegeddon. Markings say "b #4", and a manufactured date of 05/2009. I bought it in 01/2012, and it has spent half of the time since in a 70°F basement, and half in my new wine fridge at 50-55°F.

How do you think this is in its life cycle? Is this a "drink it quick before it's trash" or a "hold on to it" situation? And more generally, how do Brett-featured brews like this age?

    Thanks for your input.

I had one from the same batch about 6 months ago and it was definitely drinking better when it was fresher. I'd say drink it now as it is likely already over the hill. All that seemed to be left was the malt backbone and all of the fruit nuances and funkiness seemed to be lacking.

:slight_frown: I guess I am going to have crack mine open now too.

Thanks. That is not great news, but it's good to know. I guess there'll be a slot opening up in my fridge shortly.

Does anyone have any wisdom to lend as far as general experience with cellaring this type of beer?

I had a batch 2 last summer and it was a drain pour. Tons of oxidation and was a major let down. I really thought this one would of held up better but was a major disappointment . For what it's worth

Last year I drank a batch 1 which at that time put the beer at ~4 years old. I really enjoyed it but couldnt help but wonder how it was fresh. Since it is dry-hopped, you would think that it was intended to be drank as fresh as possible. Considering yours is at ~3 years old now, I personally wouldnt be in any hurry to drink it. I still have a bottle of batch 1 that i am in no hurry to drink until I can do a side by side with a fresh offering. (Take my advice with a grain of salt...ive been known to let beers age over the hill for the sake of comparison/learning.)
