Oops

    I brewed an apricot blond extract batch last weekend. It came with apricot puree which I apparently forgot about until now. Looked back at the recipe and it says to add it during active fermentation (2-3 days post brew day). What can I do now that's it's been 7 days?

    Put the apricot puree in a secondary fermenter and rack the beer on top of them until the sugars in the puree have fermented.

    ^This. I've added blueberries, mango, and other fruits to beers in the secondary with good results.

    As the others have said, I have found that adding fruit to the secondary is the way to go. Adding fruit to an active fermentation can lead to loss of some of the more volatile fruit flavors and aromas.
