    Grimm is a "nomad" that uses other brewers' rigs in Brooklyn, Queens, wherever. They create their recipes at the HQ in Gowanus. Likewise, Harlem Brewing Company creates its recipes in Harlem, but brews in Saratoga Springs. I'd love to be corrected on this, but I believe there are no more functioning physical breweries in Manhattan.

    I am aware of that. I think the 'detail police' will let it slide if I say Grimm is from NYC (I use that term loosely for anywhere the trains can take me for the most part). Or maybe they won't. They're crazy these days.

    Birreria is functioning in Manhattan. I've only heard of Grimm brewing in MA. Have they developed other tenant relationships?

    IIRC, they also contract brew somewhere down in (northern?) Virginia

    I'd venture to guess that their profit doesn't derive from what they brew there.

    I'm not sure what you mean exactly, but they only have two or three house cask beers on at a time... and the majority of taps are from partners and guests. Unless their brewing equipment is a sham (I'm not suspicious of this but stranger things have happened), then they qualify as a Manhattan brewpub despite the scale.

    My inference was it ain't no strugging microbrewer in a run-down neighborhood. It's Mario Batali hyping $20 brats!

    I think I remember reading somewhere that they brew their hoppy stuff somewhere in Staten Island, and the sours/barrel-aged/other stuff in Virginia.

    This is you being corrected. Unless you have some sort of evidence to the contrary.

    You're absolutely right. I just thought it ironic the only way anyone can afford to brew in Manhattan is as an adjunct to a pricey restaurant/gourmet hypermarket.

    I wouldn't say it's ironic - it's just the way it is. Brewers need space and it's expensive in nyc. Makes what SingleCut, OH and others that brew in house commendable.

    They been brewing some stuff at Flagship in SI.


    Also don't forget that Birreria is partners with Dogfish Head.

    And the above posters are correct, we're currently splitting production between Staten Island and Northern VA. Generally speaking the hoppy beers are being made in NYC and the sours and oak aged beers are being made in VA. We're always on our hustle figuring out new places to brew and trying to think outside of the box. Our latest scheme involves portable stainless cube fermenters. We'll see.
