Over a period of a few months, I've gotten their Vitus, Hefe, Kristallweiss and Festbier. All of them gushed out of the bottle. Once I clued in that I needed to start pouring immediately after opening, the spectacular, foamy heads I'd been led to expect were non-existent. A little soapy, bubbly fizz, then nothing. It's not like I'm jostling the stuff around; I bring their stuff home with other beers, but the other beers don't need to be treated like nitroglycerine. What gives? Thanks!

We carry all those and have not had or been told of any issues with them.

Vitus is the only one that is very carbonated here, with Kristallweisse being a close second, and I drink the entire range regularly.

I drink Vitus pretty consistently and I'd say 3 out 5 foam out of the bottle.

Watch a video of how to pour a hefe if you haven't seen it before. That's the only way your gonna get the foam you're talking about. You also have to make sure your glass is big enough to handle it if you're not using a hefe glass. I've never poured it another way so I'm not sure if that's the reason you're not getting the foam or somethings wrong with the ones you got. They usually foam with me as in not gush out but foam creeps up and if you don't pour it it'll start dripping. Is that what you're talking about or foam literally comes shooting out as soon as you open it?

EVERY Weihenstephaner I've ever had has exploded out of the bottle when I opened it. Has never happened with any other beer.

One I actually set in a stable spot and let sit for 2 weeks, I opened it without moving it at all and it still flowed right out. I like the beer, but I don't like losing half of it when it is opened.

I've experienced this with a few bottles of Dancing Man Wheat recently.

Ive never had a single problem and we sell a bit. The cases are always clearly dated and well within code.

Never had this problem, and I drink the hefe quite regularly. I also get good head on the pour. Are you using a hefe glass?

I'd describe all of the ones I've had as well-carbonated, but they never gush out of the bottle. I just a couple of Vitus' this week, too, and didn't have a problem (except for a fairly big head)*.

*insert obligatory "that's what she said"

Any chance you're storing them on their side? I find that some beers (I'm looking squarely at you Sam Adams) tend to gush when stored sideways.

Never had this problem. I do know that improperly pouring the (typically well-carbonated) Weissbiere can result in little to no head, though.

I recently tried the Hefe and the foam was spectactular! I poured it into a hefe glass and the head crested over the top of the glass - 3 inches of head easy. And since the rest of that beer experience was also great, I'll be looking into the rest of their line ASAP.

I just had the Hefeweissbier and Vitus for the first time last night. Both had been in the fridge for at least a couple hours and both gushed when I opened them. After the first one, I sort of guessed to hold the second one over my glass when opening. It was a good guess.

    Weihenstephan on draft is undercarbonated.

But, isn’t the level of draft beer carbonation established by the serving establishment (e.g., bar)? In other words, doesn’t the bar set the carbonation level by the amount of CO2 provided?

    Cheers!

If the system is in proper equilibrium the carbonation level will be consistent with what the brewer shipped the keg.

    Four factors:
    1. CO2% of your gas blend
    2. Applied pressure
    3. Keg temperature
    4. Beer's carbonation level

The system can be tuned to maintain the beer carbonation level, but you are right, the account can alter (intentionally or not) the carbonation level of the beer by having blend, applied pressure or keg temp out of whack.

by flat, I meant small head. It didnt have the huge white fluffy head that you get from a bottle. At least thats how its been at Milltown in Carrboro.
