Been home brewing for a couple of years now. I got an pale wheat ale kit and wanted to add some blackberries in during the secondary. Any suggestions on how much to use? We have blackberries growing in our backyard so we have quite a bit. Any thoughts would be appreciated. Cheers!
I've been thinking about doing the same thing, I was going use blackberries and mullberries since I have a multitude of both. My plan was 2lbs of each for a 5g batch. Not sure if I want to do an American wheat ale, or maybe my kolsch with the berries? I used 5 lbs of blackberries in a brett saison a couple years ago, I aged the saison with the brett for 12 months, then added the berries for 1 month, removed them then kegged the beer. The berry flavor was quite pronounced initially, though not overwhelming. It has dimished with age, particularly as the funkiness increases.
Your question about berries comes up often, especially in the summer. I've never done to offer first-hand advice, but here is a link to a search of the forum using 'berries' as the search word. https://www.beeradvocate.com/community/search/32770447/?q=berries&t=post&o=date&g=1&c[node]=8 It seems to me that you have to use caution because those berries that you pick can be loaded with a lot of wild yeast that can sour your beer in a heartbeat. But that could be a good thing if it turns out to be a good sour beer.
