I sure did- they aren't for everyone, but they make some truly tasty, malt-forward beers --- I have never tasted butter or bile in my years of drinking their beer though!

If you want malt-forward in Ft. Collins, hit up FCB. I'll stay quiet about Pateros...

#28 is pretty tasty. This brewery is tasty (at least the few I've had, so far), but to me light years behind RR.

    Cheers!

    Cheers!

That passionfruit coconut wheat tasted like sunscreen :/

Still no butter or bile though!

I love these guys -- really confused reading this thread. And I think I have statistical significance in beers rated. May not be for everyone, but the only time I had a bad Paradox beer was early days with the swing tops and even then there was 1 bad one to 4 stupendous ones. Sorry, any brewery doing nothing but one-off experimental beers, never duplicated aged in unique barrels for $11 / bottle with the ingredient profiles to provoke the pallet ... Sign me up. If it's not a home run for you every time, I have a hard time being convinced they're not hitting consistent doubles and triples. To each their own but ... I love you guys. Thanks for what you do, you stand alone.

At least Paradox has never told you your whole city was insufficiently educated to appreciate his beers...sorry for the off topic, I don't have a whole ton to add to the general conversation other than to say I like Paradox and what they're doing, though I do wish they'd be a bit more consistent...maybe hone in on a few staples that you can get consistently right and distro that. Keep the experiments to the tap room?

^^ I'm pretty happy with my run-on sentence above.

For my little experience with Paradox, I would have to agree.

    Cheers!

Not that I agree with him (at all), but that's one of the reasons I'd love to pick his brain a bit. He has no filter whatsoever, and whatever he's thinking at the time is exactly what you'll get from him. The others will give you a well thought out answer and they'll probably be at least a bit nice about it. Yester will give you the dirt you really want

My understanding has always been that good/great brewers are somewhat defined by their ability to repeatedly make a quality recipe without deviation. Would it be crazy to think that these guys aren't all that great, but cover it up by making strictly one-offs and telling people their palates aren't sophisticated enough when they don't turn out well and/or are released too early?

I the defense of anyone using spontaneous fermentation, it can be pretty tough to duplicate exact beers without blending. Especially with adjuncts like fruit involved. I think you'll find that to be the case with all of the breweries going that route. Blending is a science in itself, too.

I have said this exact thing before about Paradox. I stopped buying their beers a LONG time ago (right when they switched to 500ml bottles) and I haven't looked back. I gave them too many chances, wanting to support something unique and local, but I ended up just wasting money and drain-pouring awful beer. I get it that there may have been issues with the swingtops and blah blah blah it went on for FAR too long to be OK. I also can't get on board with the complete crap shoot that is buying their beers having NO IDEA what they taste like (the brewers can't even tell us). As for the remark about some are too young and need time to develop... you shouldn't sell beer that isn't ready to drink, that's an arrogant and insulting business tactic by blaming the customer who didn't wait long enough to drink it.

^^^ 100% This. There is WAY too much other beer out there to drink. Stopped wasting my time on these guys a long, long time ago

I've only had a few of their beers over the years (some good, some not) and based upon this thread I don't have much motivation to buy more. Have they ever made the same beer twice?

I think Skully Barrel 15 and 30 were pretty similar. But @AIRMAN_PARADOX said they never make the same beer twice.

FTFY. Recipes have to change every batch to account for different batches of malt, different crop years of hops, hops from different vendors, atmospheric pressure, changes in water chemistry, etc., if you want to have consistent beer from brew to brew.

You're kidding about atmospheric pressure, right, @dauss ???

I have the utmost respect for a brewery like Odell, who can account for varying levels of alpha acid in their hop shipments, and still make the best IPA in the land. I wonder if they ever tell people to refine their palate though. Or do they even need to?
