Peanut Butter Stout with PB2

    Hey! I'm Benson, hope everyone is doing well!

    I'm brewing PB Stout and am looking for some advice on the PB part. I was told by some home brew friends over here to add PB2 in the secondary. Needless to say, I didn't add any in the boil, so at this point it's basically a fairly straight forward american stout.

    I've read a bunch of posts where the quantity and time spent in secondary vary dramatically, so what do you guys think?? How much PB2 should I add to the secondary for a 5 gal batch? and for how long?

    I personally wouldn't use PB2 at all. You would need a couple of jars to make much difference, and it will give you a WHOLE pile of trub. I mean LOTS.

    It's far better to use Brewers Best Natural Peanut Butter Flavoring. I've used both. This leaves no trub and 1 or 2 bottles (each bottle is 4 fl. oz.) should be enough. You can add it as late as you wish - I usually add it to the keg before pressurizing. It's quick, simple, leaves no mess, much more flavorful, and can be simply added at the end.

    I will absolutely look into the extract, thanks!

    However, since I currently have 3 lbs of PB2 and none of the extract on hand, I might as well go ahead with the powder and just have the experience. Should I use all of it? I've seen people say they've used 2.5 pounds for 5 gal and the flavor was still faint ...

    OldBrewer is correct that you'll end up with a lot of trub. I usually use 2-3 lbs of PB2 though I prefer to use it at the end of the boil or at flameout and than use an extra lb in secondary if needed.

    Plan to try using at least some extract on my next try but will go with a different brand as I've found most brewers best extracts to be subpar.

    What other brands are available? For peanut butter flavoring, I've only seen Brewer's Best.

    There's quite a few on Amazon. I've had a few good extracts from OliveNation (Blueberry, Raspberry, Mango) so might give theirs a try. Their strawberry extract was not very good and coconut was just ok so not confident on how their PB is. Might give Flavor Apprentice PB Flavor a try though I've never tried any of their stuff yet.

    I have used it.

    I will 2nd the trub at the bottom. I got a big aroma when I added it to secondary, but the taste didn't carry over. I got a suggestion to add it to the bottling bucket, and I tried a small batch like that. I created Co2 Bombs that would spray everywhere as soon as they opened, I used a little priming sugar as well as PB2 and made a solution in about 1 - 2 cups of water, and it was obviously to much, but the peanut butter flavor was actually very good.

    If I was going to use that product again, I would probably use it in the bottling bucket in place of priming sugar or greatly reduce the amount of sugar and see what happens.

    Well I used 3lbs of PB2 last night. Sitting in the secondary now, we'll see what happens in two weeks!

    I appreciate everyone's feedback, thinking the next time around I'll use maybe 2 lbs with the addition of some extract. Hopefully the extract will kind of 'amplify' the peanut butter flavor and aroma and allow me to not have to use such an insane amount of powder.

    I just used 1.75 lbs of PB2. Racked off of it.
    Turns out 1.75 lbs of PB2, once it becomes saturated, eats up about 0.4-0.5 gallons of your liquid. Yikes.

    The blurb mentions craft beer. Never tried it. Never actually had a peanut butter beer. However, years ago, I had a Summit Maibock and I swear it tasted like peanuts. Made me wonder if it was something that was desired, resulting from the malts used (munich, melanoidin?) or if it was a one time off flavor resulting from don't know what (oxidation?)

    I often make Munich Helles Peanut Butter recipes. You won't find any recipes for that anywhere. Almost all peanut butter recipes involve dark beers like stouts. With a light beer like Munich Helles, the peanut butter comes right through, and if you enjoy the taste of peanut butter (I have it every day) it's like drinking liquid peanut butter. Delicious!

    2 cents,

    I brew PB beers often, if you use even all three lbs of pb2, youll get next to no pb taste in the beer.

    ...and lose much of your beer.

    I brewed a 10% milk stout in feb and added vanilla/cacao tincture along w a pound of pb2. Distributed it it over the fermented beer using a flour sifter. Kegged after a couple of days. Got a very mild aroma/flavor that was what i was looking for - beer came out awesome. If you want big pb character i’d Use a combo of brewers best flavoring and a lb of the pb2.
