Pellicles

    Part of the reason for this impressive pellicle is you have quite a bit of headspace on this. Ive noticed on my sours the more head space there is the bigger/more impressive the pellicle. It makes sense if you think about it.

    Do all sours with a mix of bugs (including lacto, pedio, and brett) form a pellicle? I have 3 gallons of a lambic sitting in primary for nearly a year now in 3 separate 1 gallon jugs, two of which have a beautiful thick pellicle and one which has none to speak of. What gives with the variability? Each have the same air lock and stopper as well as been exposed to the same amount of O2 (presumably).
