I was brainstorming some ideas for a nice christmas/holidays IPA, came up with peppermint. Am I crazy? Has anyone ever tried or brewed one?

I've tried mint in a commercial stout. Didn't really like it. And I like chocolate and mint, so I thought it sounded promising. I think making a mint IPA would be challenging. I recommend thinking about a commercial IPA that you think would work with mint. Muddle some mint in a glass like you would with a mojito and then pour the beer over it. If you like, then maybe brewing a batch with mint in it will still seem promising.

This is a very good idea, personally I think the idea of a mint IPA sounds disgusting

You're prob right on the mint, might want to experiment first before I brew a batch. Any other suggestions for a holiday IPA?

The mint IPA has crossed my mind. I think that would be great!

    Juniper is good in APA/IPAs

I was also thinking that some people seem to like spruce. Again, not for me, I think. If I want mint, I'll have a mojito. If I want juniper, a G & T. If I want spruce, I'm probably just malnourished. Most of the time, I want malt, hops, water, and yeast.

Had a mint ipa from No Label a while back, I remember it being not so bad actually. The mint was pretty subtle and blended nicely with the hops. It was not GREAT, but better than I thought it was going to be!

I'm one of those people. There's a brewery up here that uses spruce tips in their porter, and it's delicious. Herbs and such have been used in beer for thousands of years. So, I don't think it's out of the ordinary to experiment with them.

That said, I can understand that some people would prefer more standard ingredients. Especially considering that some of the ingredients mentioned, spruce, juniper, or mint are strong flavors.

I have dry hopped and randalled with lemon balm that grows everywhere around my house. It adds a nice bright flavor. In case your not familiar with it, lemon balm is a mint that also has a significant citrusy aroma.

I'm in the same boat with the mint. I was thinking about doing a stout and using a bag of chopped Andes mints in it.
