Peppermint Porter

    I am planning on brewing a 5 gallon batch of a Peppermint Baltic Porter this weekend to have for the holidays. I have never done something like this with flavoring additives. The recipe calls for 4 peppermint tea bags at flameout and some crushed peppermint candies post fermentation. What are your guys thoughts on these ways to add the flavor? Too much too little?

    I'd recommend "dry minting" with actual peppermint leaves (peppermint tea may be just that, I dunno) near end of primary, or in secondary, or in keg. Note: I've only minted in the keg, but the other two ways I mentioned would probably give similar results.

    I'd probably skip the candies. Peppermint schnapps added to taste at packaging might yield nice results, there's a formula for doing that kind of stuff in Experimental Brewing.

    I'd use Peppermint Flavor from Simply Organic.

    The do it yourselfer in me says use fresh leafs, but I don't know how many.

    Thanks for all the info everyone. I ended up talking to the owners of my Local Homebrew Store and he recommended adding dried peppermint leaves during the last 15 min on the boil so I added about a half ounce. We will see how it turns out

    I won't say that your LHBS guy necessarily gave you bad advice in this case. But I will say that in general you'll tend to get better advice here than from most LHBS people. The sad fact is that a lot of us spend a whole lot more time learning and experimenting than the average LHBS dude. The problem with LHBS advice is that it doesn't get peer reviewed to weed out nonsense.

    Let us know how you go. I've had disappointing and underwhelming results with peppermint - both using tea & fresh leaves.

    I ended up using about .5 ounce of dried peppermint which I added with 15 min left in the boil. When I took a sample to test the gravity after 2 weeks in the primary I gave it a taste and don’t really taste or smell any peppermint so I’m not very optimistic .5 ounce of dried leaves did anything.

    You can add some flavoring/oil at bottling to get the character that you wanted.
