Petrus aged red

    Completely ferments out what? meaning most Quads and Dubbels are dry?

    The added sugars get fermented. Quads and Dubbels are still not too dry because of all the dark malts used.

    Quads and Dubbels are not made of 100% sugar, but they are compatibly dryer then say an RIS. Sugar is pretty much 100% fermentable by yeast whereas malt will produce longer sugar chains that saccharomyces can not metabolize if it is mashed at a higher temperature where alpha amylase occurs.

    Petrus Aged Red is not made of 100% sugar either

    I never said it was, I can't think of anything that would be, I guess a mead might be the closest thing to 100% sugar fermentation. But I don't know much about meads.
