Pink Peppercorn Rosehip Saison

    I am planning a brewing a valentines day saison with rose hips, pink peppercorns, and grapefruit peel - loosely inspired by the Love Buzz recipe on Embrace the Funk. However, Gabe uses black peppercorn and orange peel. I'm going to use my standard saison grain bill (pils, wheat, veinna, flaked oats) and ferment with the DuPnt strain and some funky dregs. May use some centennial hops late in the boil to compliment the grapefruit..

    Has anyone ever used Rosehips or pink peppercorns? How much did you use? What was your experience?

    I have used fresh rose hips in a Tripel...but have no experience with dried. If using fresh, my advice would be to use no more than .75 ounces in 5 gallons. I used 1.5...and it was just too much even after extended aging.

    I've added 2g pink peppercorns with 2g green peppercorns at the end of the boil on a saison and steeped for about 20mins. This just gives kinda a background pepper note to complement the yeast. I would say use 6g pink peppercorns if they are the only pepper if you want it to be pronounced

    1-2oz of dried rosehips added at 5 minutes works good for me. This is for 5.5gal-6gal to the fermentor with 1 gal of trub left in the kettle. 2oz makes it pretty tart, but not overpowering. The flavor doesn't fade.
