Pitching on a Wyeast 3522 yeast cake

    So I have made 5G blonde, 18a, og of 1060 with 3522. I want to do a belgian (I)PA soon. would it be an over pitch if I just pitch another 5 gallons right on top?

    IMO, Yes. Another option would be to use just a portion of the yeast cake.

    Thanks. If I were to pitch on the cake would the yeast not be stressed enough, thus they would not produce enough esters and phenolics and the like?

    I'm not sure I'd characterize it as lack of stress, but yes, when yeast that don't have to propagate at all, the chemical pathways that rely on byproducts of propagation will be limited. Probably the main (most likely) effect is (too) low esters.
