Pitching yeast for bottling too early?

    So I had 2 3 gallon batches in carboys. One (10% abv) was aging on oak cubes for 3-4 months, one (8% abv) was aging on cherries for 6-8 months. I re-hydrated a pack of s-04 and put half in each carboy, about 2 weeks before I plan to bottle them. Mainly because I wanted to make sure there wasn't residual sugars from the cherries and might as well throw some in that other batch. Any problems with that? Will this yeast still be viable at bottling time or should I pitch more at bottling?

    I'd say if your yeast tollerance can handle it you'll be fine. Most dry yeast can handle 11 or 12% ABV well enough you'd be ok.
