I'm looking for yeast suggestions. I have used Fermentis T58 many times because I really like the flavor. It has just a tiny bit of a Belgian ester quality without being in your face. My problem with it is flocculation. I find it hard to get beer brewed with this yeast to clear. T58 seems almost impervious to cold crashing. Can you suggest a yeast with a similar flavor profile that floccs better? Liquid or dry doesn't matter. Normally I clear my beer with patience and cold crashing but maybe going forward I need to use gelatin with this beer.

I have not used that yeast but Wlp550/WY3522 has a nice Belgian character and floccs out hard when it's done.

If the sole problem here is yeast in suspension I would suggest Isinglass as a fining.

    Cheers!
