Points from pumpkin

    Anyone have a reasonable idea of the points of gravity that pumpkin puree will contribute to the wort?

    Little to nothing in my experience. I factor in zero and dont notice a difference in my normal efficiency when using canned pumpkin (one of those 30ish oz cans per 5g) that has been roasted. The issue with pumpkins is that they are more starch that doesnt convert, so you end up with very little fermentables even if you add to the mash. I guess if you added in a very large portion of pumpkin, you could coax a few og points out.

    Then we need to break their will... I think two years in a Russian penal colony will solve the problem.

    Any starch that is gelatinized should convert. If the pumpkin is roasted, I would assume it is gelatinized. This should contribute points at the same rate any any starch, although I don't know the numbers for pumpkin.

    Hopville gives 9ppg for pumpkin puree, so in 5 gallons of wort it is maybe 2 points?

    I've learned the hard way that hopville's numbers are user input and can be suspect... I'd look for a more reputable source than that, sorry.

    Here is a crazy idea.
    Take a pound of pumpkin, a shitload of beano tablets and a gallon of water.
    Mix well and take a gravity reading and call it points per pound per gallon.

    Beano has enzymes that can convert starches to sugars.

    Beano converts starch to simple sugar. I am not really sure it is necessary in this application, or if the OG reading from a starch solution is different than one from a simple sugar solution.
    If beano is cheap I just may try this for kicks.

    You may be wondering why you need a metric shitload tonne of beano. You dont, but LeChatelier would be proud.
