    Wrap up... I've comprised a list of malts that I think are appropriate to choose from and should be available in the US market. This is not an exhaustive list, I'm sure there are more, and if you have suggestions please let me know and I'll add them to the list. Also these are typical specs, so they will vary based on where you source the malt.

    It looks like the main decision for the English Palts Malts will be if you want to use floor malted barley or not. Other than that I think we just need to stick to an EBC range of 4.5 to 5.5 and a Nitrogen range of 1.5 to 1.6
    (Personally I'll probably use Pearl just because I just picked up a sack)

    For the continental malt you're going to have to decide to use either an English maltster's version of Lager/Pilsen malt or an European pilsner malt. It's unclear what barley the English maltsters use for their lager malt. I'm guessing it's English Barley, but if someone knows please pipe in. These malts are lower in EBC and higher in nitrogen. I think any of the malts listed would be good to use. Notice that you can get a floor malted pilsen malt from Weyerman if you want to stick with floor malt.

    So what does everyone think? Do we have enough information to pick our malts?

    Should we discuss flaked maize? or do we just use what is available?

    Do we move on to the invert discussion?

    I know Crisp use Flagon for their lager malt as well as their pale ale malt. No idea on the rest

    I will probably use Golden Promise and Weyerman's Pils since I have both of those on hand, but I could be convinced to use something else if there was a good reason.

    Is there much to say about flaked maize? I don't think there is much choice, NorthernBrewer has "Flaked Maize" http://www.northernbrewer.com/shop/flaked-maize-1-lb-unmilled.html but nothing else.
