Porter Addtions

    I making Midwest Supplies "London Fog Black Porter" extract kit in a couple weeks and I'm looking to spice it up and maybe stretch my skills a bit. I am thinking about adding cold-pressed coffee and vanilla extract - either into the bottling bucket or trying my hand at xfering to a 2ndary, adding it then. Another other suggestions to really make this brew standout?

    Here's the kit ingredients list:
    6lbs Dark LME
    Specialty grains - 8oz Carapills / 8oz black malt (premixed)
    1oz Fuggles / 1oz Willamette
    Wyeast 1028

    Vanilla bean is simple enough. If you've hit your FG, there's enough alcohol you can cut open a bean and toss it in and not worry about infection. But, I'll often soak in vodka. Don't do extract. Along the same lines, I did cold brew at bottling for a while and then tried whole bean. Whole bean is the way to go, IMO. That last part rhymes. Boom.

    I'd just do one or the other, and the one I'd do would be the vanilla.
    Porters are a great base beer for flavoring, BTW. A lot of spices will work well, along with some fruits, dry hopping, blending with a sour portion, etc. Lots of different malt-bills that you can try, as well. Figure out a plain(ish) porter that you like and then play around with it.

    Sorry, but you can't add fancy stuff to Porters. It upsets the classic Porter people. Call it a Stout and add whatever you want!

    Coffee, vanilla, coconut, cinnamon, peanuts, peppers, cherries, chocolate, lactose, oats, pumpkin, pumpkin spices, sassafrass, licorice root, bourbon, bonito flakes, miso paste, oysters, random things from the forest, etc...

    After much research, I think this is the route I'm going to go. Did you just toss in the primary once FG was reached or did you move to 2ndary and toss in the vanilla bean?

    The former. Transferring runs risk of infection and oxidation so I avoid if at all possible.
