I recently seen on Chicago's Best, the GI brew master poured the beer into the center of the glass which created a massive head of foam on the beer. @1:20 Is that crazy? I never pour my beers with that much aggression. What is the rationale?
I also saw the faucet touching the beer at ~53 seconds, which is a big no-no, unless you like bacterial contamination in your glass, of course. But the only good reason to pour like that is if you like watching your beer for ten minutes before you can actually drink it.
Randy Mosher agrees with this method in his book, Tasting Beer: An Insider's Guide to the World's Best Drink. As @AdmiralOzone mentioned above, it helps to fully release aroma, and Mr. Mosher also comments that it helps texturally to create a creamier feeling head. Michael Jackson also agreed with this method, but only when it came to pouring lagers. But yeah, never touch a faucet to glass. And you should never drink from the can, despite what this guy, or The Alchemist for that matter, says. Though i've been known to have some CCB Invasion from the can on a disc golf course or two.
