Prairie Artisan Ales Bomb

    Has anyone ever cellared this? It's a big beer but I don't know how the coffee, vanilla bean, cacao and chili pepper aspects would hold up over time.

    I currently have 5 in the cellar, but I have not consumed any that have sat for any length of time. I've had 3-4 bottles over the past year or so, and 2 of them were magical, and the other 2 were just meh. Only 1 was fresh, and that was one of the good ones. After I've deliberately aged one for a year or 2, I can chime back in.

    Everything I have heard is don't cellar it. The outstanding flavors mellow and it just becomes a so-so beer.

    The coffee and chocolate fade first, but I think that's a good thing. When fresh, they just take over the flavor profile of the beer and it becomes a little more one-note. A few months in the cellar takes care of that.

    I would not age Bomb past a year.

    I was figuring one year would be about right for this beer. I have 3 Christmas and 3 regular bombs that I picked up December 2014. So this Christmas should be nice. In addition to the Beer that Saved Christmas will be a year old as well.

    I've always heard anything spiced will just fade away. You will probably end up with a solid imperial stout, but nothing at all what the beer was intended to be. I drank one fresh and thought it was great. I drank one at 5-mo and thought it was already fading. I hurried through the rest.

    I prefer them fresh. With Bomb! the chili heat fades, but it's still a good beer. Personally, I don't think the chocolate or coffee decline. If you have a few, save one of each wax/wrap color back and drink the others now.

    With Christmas Bomb! I say definitely drink it now. I had it fresh and 1 month old and the spices were very subtle.

    With Bomb! being very low carbed, I'd worry about extended time oxidizing it even further.
