Pre-Boil Split Batch: Witbier & Saison (recipe thoughts)

    So I'm working on somewhat of a Allagash White clone, which I'm happy with the recipe. At the same time I was given 1# of Comet from a friend. I know Comet will be out of style, but I'm thinking of making a Saison with it. So the two different thoughts have combined; I want to use the same mash for both with the grist being driven by the Wit.

    What can't change:
    Grist as follows (OG 1.050, 10 gallons split into two 5 gallon batches)
    - 3# 6 oz Red Wheat
    - 5# 10 oz Raw Wheat
    - 13# 8 oz Pilsner
    Comet hops

    What can change:
    Option to steeped specialty grains
    Option to added extract or sugar to boil
    Hop schedule, with Comet TBD.
    Yeast TBD, likely preference 3724

    I have not developed any specific vision for the Saison of what I'm after. So this will be very much an open ended post; just brainstorm within the constraints what you'd do, not what you think I want.

    At the risk of sounding callous, I'd ditch the Comet and the idea that a Saison can be made from a recipe optimized for a Witbier. I've never used Comet, but from its description would be afraid to waste a 10 gal brew-cycle with a suspect hop. I would go buy some Saaz/StGolding/EKG (traditional stuff). As for the Saison: you're looking at over 40% wheat and Comet. If you're willing to take that risk I would wait until it's finished before declaring what style it is . . . could end up an American Wheat, maybe a White IPA, who knows?

    @PortLargo, my first thought was a PA or IPA. However, buddy through out the idea of Saison and am now giving it consideration.

    Point of clarification, only 5 gallons would be Saison, so we're really only talking less than $20ish with yeast, I buy Pilsner in bulk. However, your point is well taken.

    That wort might make a good NE Pale Ale beer. Just use lots of dry hops (e.g., Citra, Galaxy,...) to obtain the aroma/flavor needed. Use something like 1318 as the yeast.

    saison wouldn't go so well with comet. comet is super strong dank grapefruit, definitely an IPA hop. i'd keep one or the other. i don't really like hops and phenolic yeasts together.

    I could see Comet and 3724 working well together, but I like hoppy saisons.

    So here’s the new plan.
    Wit – 1.050 target OG
    IPA – 1.065 target OG

    New grist:
    - 3# 14 oz Red Wheat
    - 6# 8 oz Raw Wheat
    - 15# 9 oz Pilsner

    Pre-boil total volume about 14 gallons; 6.5 gallons goes to Wit and remaining 7.5 gallons to IPA. Wit then gets a post mash extra gallon to achieve the about target OGs.

    IPA hop schedule:
    FWH 0.375 oz Simcoe
    30 mins 0.25 Comet
    15 mins 0.375 oz Simcoe
    5 mins 0.75 Comet
    5 mins 0.5 oz Simcoe
    Dry hop 2 oz Comet
    Dry hop 2 oz Simcoe

    I would sample before dry hopping with that many "big" hops. Also, while I have liked Comet in the past (and have a pound in the freezer), I have never dry hopped with it.
