    Alcohol is a poor solvent for proteins so high concentrations will prevent foam. In fact it is used for this purpose in some lab procedures. It is not clear what the concentration of ethanol in beer will do. Probably depends on other factors.

    Update: Partial answer to prediction #1... I ferment in a conical, so can't see the activity inside, but pressure started building on my spunding valve's gauge in less than 4 hours after pitching. Remains to be seen how the rest of fermentation will go, but it was not a slow start.

    I think you biased the predictions based on the way you asked the question. I think that's why you got so many responses mentioning sluggish, though 05 is not known for that.

    Let me get my notes...

    FG was reached in 5 days, but was more than a little bit higher than I expected. I let it go to 14 days, hoping to eek out a little more attenuation, but it didn't happen (measurably). So, fast out of the gate, but hit a wall.

    There's no noticeable soapy flavor. There is however, just a hint of coconut that I and others noticed, which is surprising since there's no coconut in this. There's chocolate, vanilla, peppermint, and lactose. One person who detected coconut described it as "coconut oil," so it does make me wonder if fats/oils from the chocolate are bringing that.

    Foam retention doesn't seem to have been affected too much, if at all. Here's a pic I just took. It's a small sample glass, so the foam is actually a little tighter than it appears in this perspective.

    What was the schedule for hops and other flavorings? Mostly curious about where the coconut came from.

    My first thought was that the chocolate , vanilla , lactose and roast malts are well within the family of beery stout flavors that you would find coconut, so maybe peoples minds are just filling in the blank?

    Hops: 20 IBUs Fuggle @ 60
    Dark Chocolate (100% Cacao): 4 oz. @ ~40
    Lactose: 2 lbs @30
    Cacao Nibs: 4 oz dry nibbed
    Madagascar Vanilla: 1/2 bean dry beaned
    Dried Peppermint: 1/2 oz dry minted

    I often confuse coconut and vanilla. My guess is the vanilla is the cause of the coconut. If you think about oak and bourbon, what is good bourbon known for? You guessed it -- vanilla & coconut. These compounds seem to be related somehow.

    Oh and uh... I called it -- normal beer, normal head, not soapy. :slight_smile:

    Well, maybe. But I have to say that I've spent a small fortune over the years with Beanilla, and I had never noticed coconut in my vanilla beers before.

    Could be the nibs. I've used custom made nibs from HI and store bought in Vt. Both had very different tastes. Processing nibs and the roasting can be different especially when one is mass produced and the other is small batch artisan.
