Can I use fruit that's been preserved in a jar for a lambic. Basically I only ask because the fruit I wanna use I don't think I can find fresh in th US. Wanna try a cloudberry lambic or maybe artic raspberries.
I think your main concern is going to be what kind of additives are in the jar. Most fruit in a jar has had plenty of sugar added with the possibility of pectin, water, citric acid... A lot of people use canned fruit that is intended for baking because it usually doesn't have those additives.
I read up on the cloudberry and it said it was some big word that meant it could be preserved naturally without any additives. So, I think I'm safe in that aspect.
Another option is buying it frozen. That way you know it's just the frozen fruit and not any preservatives or anything.
If I could find some frozen, I would. Been search all over the Internet for some, all I can find are jars.
I say go for it. Worst case scenario you get the jam and it has some stuff in it and you have really good toast Also, if you are able to brew it, you should definitely get a bottle of Soleil to do a side by side
I can only dream of getting one of those. That's why I'll try and brew my something like it. That and some artic raspberries sound really good.
