Primary in Wood

Anchorage brewery uses only wood to ferment in. I think they only make brett beers though. They make some of the best beer I've had too. I think it will be an interesting ride for you.I think you will just need to figure out a way to work with the bugs instead of being afraid of them.Brett yeast should help.
