I am about to start shadowing a brew master. What books would you guys recommend for someone getting into the industry. I am a home brewer already and have read books on that subject. Just looking for something to help on a larger scale. Thanks guys
That's a great resource. I would also recommend Technology Brewing & Malting by Wolfgang Kunze. It'll run down EVERYTHING in the brewing industry. It's translated from German though so you'll have to remember that much. You can pick it up from the Siebel Institute for around $295 or so. But having said that, shadowing a brewmaster is going to give you more than any book ever could. Hope all goes great for ya! Prosit!
The MBAA Practical Handbook for the Specialty Brewer is a set of three books that gives a great overview of the production of beer on a commercial scale. It lacks depth on some areas, but was definitely the easiest resource for me to digest when I got into commercial brewing. The Kunze has more detail in some areas but is also very German-centric which is good and bad. When I was preparing for the international program at Siebel, those two were what they had us read. Still refer back to them four years later.
Any brewers out there have recommendations on good commercial brewing texts? Whether it be theory, brewing science, raw materials, quality control, brewing processes, history or what have you.
