So i just brewed my third batch. it was the kalamazoo IPA from austin homebrew. 7# extra pale LME 2# vienna 8oz cara pils 5oz crystal 10L 1oz centennial @ 60 .5oz centennial @ 30, 15 .33oz centennial @ 0 3 gal boil topped off to a little over 5 gal in carboy so the recipe says OG should be 1.060 but when i took it it was only at 1.040 @ 70 deg. Also i have it in a 6 gallon carboy and there is about 6 inches worth of sediment on the bottom. it has only been there for about 2 hours. is this normal. this is my first IPA so i dont know if the sediment is from all the hops. i did filter through a strainer. and with the gravity reading???? did it just not mix well? any help would be great. cheers!
Did you mix the top up water in really well before taking a gravity reading? If not then that's your problem.
I'm 99% sure Vienna should be mashed. But that's besides the point. If you had *just* brewed it, it'll look like there's a ton of sediment in the carboy but it will settle out in a day or so. And yeah, not mashing will decrease your gravity points.
You probably got poor conversion of the vienna without a proper mash. That could explain a qood chunk (maybe half) of your OG difference. But just the LME iteslf should have got you to 1.050 in 5 gallons. Did all the LME make it into the boil, or was there some left in the jug? Have you checked your hydrometer with distilled water? (Should read 1.00.)
