process for a lager

    Hi. I brewed a Vienna lager last Wednesday night the 16th.
    It's been fermenting at around 50 deg since (some slight variation, but not much higher than that).
    Starting yesterday I let it ramp up, it went to 51.5 deg since last night.

    This is the 8th day, and fermentation appears to have really slowed down.

    Should I start a D-rest now or wait? I was going to gradually bring up to 60 over the course of a day or two.

    Then, how long to I do the D-rest?

    After the D-rest I was going to siphon into a keg and let it lager for 4 wks or so.

    What's the gravity? One method is to wait until attenuation is nearly finished, with about 2-5 gravity points SG remaining. Or you can wait until attenuation is completely finished. I do the former.

    At least until attenuation is done. Or a couple days if it was already done before. I let mine go about 2 days beyond when attenuation is done, then rack, cold crash, and lager.

    So, is now the time to start the D-rest? The kreusen hasn't started falling yet. Do I D-rest until it does?

    Oops, didn't see the whole answer on my small screen.
    OG: 1.062
    Current: 1.018
    Target 1.015-1.020
    Would be great to dry out a little more.
    I'm going to start raising temp tonight.
    This is way faster than I thought.

    Time to D rest. That is not too fast for a lager. rest for 2 days at temp, then crash to near freezing.

    Thanks! It was at 51.8 deg, it's in a tub of 53.8 deg, then will slowly come to 61 deg during the night and into tomorrow.
