They're doing a level one class in Ottawa hosted at Kichesippi Beer Co in September (more info: http://bit.ly/12Xfidp). Anyone have any experience with the classes?
Although I haven't officially gone through the level 1 certification, I've had Roger Mittag (founder of Prud'homme) as a teacher in the Niagara College Brewmaster Program and as an instructor for a sales company that represents several large beer brands. In both of these cases, Roger walked us through nearly everything that is covered in his level one class. It's both comprehensive and easy to understand and is perfect for those who don't have much knowledge on the actual process of brewing and all of the ingredients that go into it. I hope that helps and best of luck with your training!
I did the Level 1 online a few years ago. It was pretty decent. Not sure how it would go in person, but I'm sure it would be a better experience since you can have questions answered, etc.
