I'm proud to release the next variation of our Chardonnay barrel aged mixed fermentation saison, Sanctuario on a mix of honeydew and cantaloupe melon. When we were tasting through the first batch of Sanctuario that we aged in Chardonnay barrels, we came across a single barrel that exhibited strong notes of melon in the nose and flavor. It was such a lovely barrel, so we decided to pull it aside and fruit it with a mix of Tuscan cantaloupes and Olathe Colorado honeydew melon. We added 40 pounds of each fruit to the barrel and aged it for an additional 90 days on fruit before bottling. At the time of bottling, this beer had a pH of 4.2, a TA of 4.7 g/L and an ABV of 5.2%. It has since picked up a touch more acidity during bottle conditioning, but personally I think it is perfectly balanced for this beer. I hope you enjoy this beer as much we have had fun brewing it! Would you ever consider 12 ounce bottles? I'd probably spend $12.50 for a 12 ounce bottle, I won't spend $32 for a 25.4 ml bottle, personally. Those are just my buying habits, not about any brewery.
Our thinking behind using 750 mL bottles is that beer in the styles we brew, is meant to be shared. We do not have plans to use small format bottles in the near future. That said, we might consider small bottles for very limited barrels down the road, so that more people would have access to those beers. We aren't there yet, but it's not off the table.
Gotcha. And I just noticed I totally botched the math up above. I was trying to maintain your price per ounce, just switch it over to a 12 ounce format. Should have been $15.12 for a 12 ounce bottle. (At that cost, I wouldn't buy, FWIW, so bottle size is no longer an issue one way or the other for me.) Cheers.
Fair enough. Barrel aging costs a lot of money on our end so we need to charge accordingly. It's not for everyone in terms of price points. Luckily many non BA beers are cheap and plentiful.
