I want to make a Maple Pumpkin Imperial Porter for the fall. I have the recipe worked up for the malt and hop bill, just wondering how much Pumpkin Puree (Canned Pumpkin Pie Mix), Fenugreek, and Pumpkin Pie spice would be good. I want a nice balance of pumpkin and spice, with a forward maple flavor that won't overpower the other flavors, but present itself. It will be in an 8% Porter, MO base, 1/2# UK Crystal 77, 1/2# UK Pale Chocolate, 1/4# Black Patent, 1/4# Roasted Wheat. Challengers to 30 IBUs. WY 1369 West Yorkshire @ 66*F. Shooting for a FG of around 1.020.

I brew a pumpkin ale every year and I use 60 oz. of canned pumpkin (roasted for about an hour) added to the mash and the following spices at flameout:
    1/2 tsp - Cinnamon
    1/4 tsp - Ginger
    1/8 tsp - Nutmeg
    1/8 tsp - Allspice
My base beer for this is an amber ale so the spices may need to be increased so they aren't overpowered by the bigger flavor profile of a porter.
