Question about aging DIPA's

    Doesn't aging a DIPA for an extended period adversely affect the hop flavors and aromas?

    A thousand times....YES.

    Personally, I'd try to drink any good hoppy beer within two months of bottling and two weeks is a lot better... Some hold up better than others.

    Then why do I read about folks aging them for a year or more, how does that benefit the beer?

    The only IPA i hear people aging is DFH 120 min cause its 18-20%abv. Quite frankly I don't even consider it an IPA (taste wise).

    As far as I know, it does not. Unless you really like bitter, malt flavored whiskey water.

    Not stupid, good that you know. Much more stupid to quietly age your great, and expensive DIPA's in the basement for a year. It's amazing to me how much variance there is in beers' ability to age without losing the hop aroma/taste. Flower Power, a beer that I love, ages terribly and I won't buy it if it's more than a month old. Founders All Day IPA ages like a champ and still gives you a good shot of grapefruit after several months... I have no idea why.

    If your DIPA straddles the lines of DIPA and Barleywine when fresh, it will probably straddle the lines of DIPA and Barleywine when aged. In that case go for it.

    If your DIPA is a no doubt DIPA when fresh, it will probably be very disappointing when aged.

    Double Crooked Tree, Devil Dancer and 120 minute, age away. Nearly every other DIPA should probably be enjoyed fresh.

    Grab a case of Sierra Nevada Bigfoot if you want to experiment with aging beer.
    Drink a few fresh, then pull a bottle every 3-6 months.

    You can do the same with Brooklyn Chocolate Stout, North Coast Old Stock Ale, and Weyerbacher Insanity.

    Granted, these are different styles than what you inquired about, but these are solid options to see what age can do for a beer.

    Unfortunately, I couldn't even get through one fresh bottle of Bigfoot, waaay to bitter for me! XD

    Didn't think that would be the case since I wouldn't consider Bigfoot more bitter than many examples of the DIPA style you inquired about.

    Oh well.

    To me, Bigfoot was just bitter without being hoppy, if that makes sense. I plan on trying it again in the future but after that first bottle, I find it a bit intimidating.

    I am curious on this topic as well, as some beers considered IPAs I have seen aged; granted, almost all of them are higher ABV (as are DIPAs). Granted, a lot of what I see are by following Dogfish Head and knowing they have Vintage & Vinyl Thursday where they offer aged versions of quite a few of their beers.

    My first experience with aging was at Flying Dog Brewery where they (seemingly off the cuff) offered a few of us on the tour a comparison of new versus aged beer (sadly I can't recall the exact beer it was, I think it might've been a farmhouse ale). It was very interesting to note the difference.
