Question about aging DIPA's

    What if it's a barrel aged DIPA? Fresh or Cellar?

    Aging will affect the flavor profile, but (depending upon your preference), not necessarily adversely. If bitter hops is not your cup of tea, aging can help smooth it out. Celebration, although an IPA that most enjoy fresh, is a fine brew after one year - great malt profile, not so bitter. Same with Bigfoot (but bigger profile). So the answer depends on your need to have a bitter beer.

    IMO Barrel Aged IPAs are a bad idea in the first place. I generally suggest avoiding them altogether.

    Does the beer still rely heavily on the hop characteristic or are there significant sub-flavors that can carry the beer as it ages?
