Question about airlock activity

    I did not sample it unfortunately.

    Is it ok to leave in the fermenter until the 2 weeks is up? (Thursday)

    Yep, it's okay to wait until it's convenient for you to have the time to bottle the beer. Wait for the weekend if you want. The bottling process can take nearly a full day on your first time since it's all new to you.

    Waiting some extra days will also allow the yeast more time to try to clean up potential off flavors from the fermentation if it was a bit too warm for your particular yeast.

    Do any of y'all have any advice for choosing between priming sugar and fizz drops? My kit came with corn sugar but the directions dont ask you to calculate how much of the sugar to use, just asks you to mix the 5oz bag of sugar with water, boil for 5 minutes, and add to bottling bucket before racking the beer over from the fermenter. After reading a bit online today I realize I need to calculate how much sugar to use depending on the style and temp of the beer, which I will do when I bottle. But my homebrewing friend told me I should get fermenter's Favorites Fizz drops, of which you put one in each bottle and two per bomber before bottling. I wonder if this is a less than optimal method since when you calculate the amount of sugar to use in a priming solution you take style into account, whereas a drop will provide the same carbonation level no matter the style?

    I always use a calculator online (or do it myself) which takes into account current temperature. I also only bought the corn sugar with the kit for about 1 or 2 batches and just use table sugar (it's the cheapest of all options). I have never used the carbonation drops because I like to have that final control, you take all of that time and effort to get the beer to that point and then go for average carbonation. I am critical of carbonation level though, I really don't like under or over carbonated beer.

    To add the sugar just take a small amount of water (1.5-2 cups) and heat it up to boil it for 5 minutes or so and add it to your bottling bucket, best to add it to the bucket warm because it will be syrupy. It is super easy.

    All that being said, for the style of beer, if you would be okay with the drops if you want to go that route. It is probably a little more hassle over all because you have to mess with every bottle.
