Tonight i opened a 2011 bottle of fou' foune and this is my 3rd bottle for the year. The first 2 were fairly apricoty but not a heap but tonights bottle was like biting into an unripe apricot it was fantastic. I didnt think there could be so much variation between bottles from the same year. or is it just my taste buds finally working properly?
Certainly could be a combination of both. Depending on what you ate or drank before and lots of other physical things along with slight bottle variation and your ability to better distinguish apricot flavoring from previous bottles im sure all had a hand in your experience. I too have had a few cantillons from the same batch that i notice slight differences in but their batches seem pretty consistent overall.
