I bought a couple of bottles of Entropy. I haven't opened them yet, but I'm wondering: Since the label says "completely uncarbonated", and given that it's about 15% ABV, can you open this and then just re-cork it and keep it like you would a bottle of liquor?
I don't think so. I expect it would degrade like a wine as 15% is not enough to preserve it once it hits oxygen. You'll get a few days opened before it starts to taste like vinegar.
Ask the brewery: http://mystic-brewery.com/contact I tried it. I don't think it will behave like a typical dry wine. They used sherry yeast, although I'm not sure it was fermented like sherry (I don't think it was), but it's entirely possible that oxidation will not spoil it, or not as fast. Mystic brewed it previously, so I'd assume they have experience with open bottles.
Yeah, email them. They're good people. Chances are that you can get a few days out of a bottle just by re-corking it, but I wouldn't throw it in the liquor cabinet.
