Question about oak tanks

    Yeah the stuff on wood would be prepped differently.

    Once upon a time the Germans, used pitch on almost everything and the Britis did not use it at all. This might have been why dry hopping barrels before delivery to the pubs got started since that was done in Britain and not Germany. The hops controled the Brett and covered any flavor changes from that stuff.

    oak tanks generally aren't replaced, they are obviously too big and expensive to do so. They are more or less permanent. The 60 gallon barrels are for periodic replacement.

    Wood has pores that can hide bugs and critters fairly deep. The pitch was a microbiological barrier.
