question about stuck fermentation

    Blueberry red ale. Nottingham yeast, all grain mash, mash temps 155-160. 3 independent 5g buckets. No change to any recipe eccept each one had 0,1,2 bottles of corn syrup added respectivly in last 15 min of boil. Amount of fruit was increased in each one by a cup as well. Ferment temps 63°, nottingham pitched dry @ 75 deg. og were 156, 165, 189 respectivly.

    Now, a month later (4 weeks solid) sg is 115, 123, 130 respectivly. No airlock activity.....

    The first fermenter is probably done. But the other two should be lower with nottingham. Heck, 1.01 from what ive read. Are they stuck? Or was the gravity too high for nottingham?

    let's look at these gravities.
    your OG was 1.056, 1.065 and 1.089 OR 1.560, 1.650 and 1.890? Clarify the FG as well.

    With a mash temp of 155-160 you are going to have a higher FG due to excess unfermentable sugars. In my experience if you mash that high your FG ends up .005-010 higher than you want it and creates a sweeter fuller bodied beer. It does the opposite if you mash too low at 145 and you end up with a lower FG and a thin/dry beer. Mash temp of 150-152 is ideal for most use cases unless you are intentionally trying for one other range of the spectrum.

    Sorry 1.056, 1.065, 1.089. Forgot the zero. Glad im not an accountant. ...what im gathering is the mash temp was high an thus unfermentabels. The only beer i like dry is hopped up ones. Does wonders to the sinuses.

    In 3 days i will take another gravity reading. Cheers.

    And yeah, bluebery red ale. ....blackberries are gay. ..........the grain bill mix turned the wort red brown, the blueberries made it dark red, and the fermentation has it lookin tit!
