Question on aging lambics

    How is this possible? I read on the "How to store beer" page and it said lambics were one of the styles that could be aged but have low ABVs. Is it because of the high sugar content that allows them to age? I always thought beer had to have high ABVs to age well.

    It's the pH.

    Lambics don;t have high sugar content. There are many things that chew on their sugars, most can eat long chain sugars.

    No beers don't have to be high in ABV. I'd rather go for dark malt. I have some 6% or so Porters that age great. And some Triples that don't age well.
